BUTTERSCOTCH BARS
- 2 eggs
- 1 c. sugar
- 1 stick oleo or butter
- 24 graham cracker squares (2½ cups)
- ½ c. miniature marshmallows
- 6 oz. butterscotch chips
- ¾ c. peanut butter
- Beat 2 eggs in saucepan, add the sugar and butter. Boil 2 minutes, stirring. Cool.
- Crush graham crackers and add miniature marshmallows. Add to cooled egg mixture and press into 9x9 inch pan. Melt butterscotch chips and peanut butter and spread over mixture in pan. Chill well. Can use chocolate chips, if desired. Cut in small squares.
