PINEAPPLE SHEET CAKE
Serves: About 24 servings.
- 2 c. all-purpose flour 2 c. sugar
- 2 eggs
- 1 c. chopped nuts
- 2 tsp. baking soda
- ½ tsp. salt
- 1 tsp. vanilla
- 1 (20 oz.) can crushed pineapple in heavy syrup, undrained
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (16 oz.) pkg. confectioners' sugar
- ½ c. butter or margarine, softened
- 1 tsp. vanilla
- ½ c. nuts, chopped
- In large bowl, combine cake ingredients. Mix until smooth. Pour into 15xlOxl inch pan. Bake at 350 degrees for 35 minutes. Cool.
- For Icing: Combine cream cheese, sugar, butter, and vanilla in medium bowl. Beat until smooth. Spread over cake and sprinkle with nuts.
