YUM YUM COFFEE CAKE
- ½ c. butter or oleo
- 1 c. sugar
- 2 eggs (add singly & beat)
- 2 c. sifted flour
- 1 tsp. soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 c. sour cream OR 1 c. evaporated milk with 1 Tbsp. vinegar (in place of sour cream)
- 1 tsp. vanilla
- ⅓ c. brown sugar
- ¼ c. white sugar
- 1 tsp. cinnamon
- 1 c. nutmeats
- Combine first 9 ingredients to make a batter. Put ½ of batter in 9x9 inch pan. Cover with part of topping. Add rest of batter and cover with remaining topping. Bake at 325 degrees for 40 minutes.
- CINNAMON NUT TOPPING: Mix last four ingredients together well.
