YUM YUM COFFEE CAKE
 
Ingredients
  • ½ c. butter or oleo
  • 1 c. sugar
  • 2 eggs (add singly & beat)
  • 2 c. sifted flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 c. sour cream OR 1 c. evaporated milk with 1 Tbsp. vinegar (in place of sour cream)
  • 1 tsp. vanilla
CINNAMON NUT TOPPING:
  • ⅓ c. brown sugar
  • ¼ c. white sugar
  • 1 tsp. cinnamon
  • 1 c. nutmeats
Instructions
  1. Combine first 9 ingredients to make a batter. Put ½ of batter in 9x9 inch pan. Cover with part of topping. Add rest of batter and cover with remaining topping. Bake at 325 degrees for 40 minutes.
  2. CINNAMON NUT TOPPING: Mix last four ingredients together well.
