ELLENS SWISS STEAK
- 2 lbs. round steak (3/4" thick)
- ½ c. flour
- 2 Tbsp. shortening
- 1 tsp. salt
- ½ tsp. pepper
- 1 med. onion, chopped fine
- 1 sm. green pepper, chopped fine
- 1 c. tomato catsup
- 3 c. water
- Cut meat into serving size pieces. Pound flour, salt and pepper into meat. Brown in hot skillet on each side in shortening. Place browned meat and all other ingredients in heavy; covered pan. Liquid should cover meat. Add water, as necessary. Bake in 325 degree oven for 2-3 hours, until tender. Makes a delicious gravy for use with mashed potatoes when served.
