BEEF CHILI

BEEF CHILI

Serves: 4 servings
 
Ingredients
  • 1 lb ground beef (or sub ground chicken or turkey)
  • ½ large onion diced
  • ½ green pepper diced
  • 2 Tbsp oil
  • 2 (14.5 oz) cans diced tomatoes (do not drain)
  • 1 (15 oz) can red kidney beans
  • 2 garlic cloves
  • 1 Tbsp chili powder
  • 1 Tbsp cumin
  • 1 tsp oregano
  • ½ tsp salt
  • cayenne pepper (optional for heat)
  • diced jalapenos (optional for heat)
Instructions
  1. Chop up the onion and green pepper. Add to pan with oil and cook until soft (about 3-4 minutes).
  2. Add beef and stir until browned.
  3. Combine all remaining ingredients, stir well, and simmer for about 30-40 minutes.
  4. Taste and adjust seasonings for taste.
  5. Eat plain or top with saltines, cheese, sour cream, avocado, jalapenos, etc.
