DAD’S BARBECUED BEANS

DAD'S BARBECUED BEANS
 
Ingredients
  • 2 (24-30 oz.) cans pork & beans
  • ¼ lb. bacon
  • 1 med. onion, minced
  • 1 c. chopped celery
  • ½ red or green pepper, chopped
  • 1 can (303) tomatoes
  • ¼ c. vinegar
  • ½ lb. bacon square
  • ¼ c. brown sugar
  • ¼ c. white sugar
  • ¼ c. New Orleans molasses
  • 1 tsp. salt
  • Pepper to taste
  • 1 Tbsp. cinnamon
  • ⅛ tsp. nutmeg
  • ⅛ tsp. allspice
  • 1 Tbsp. prepared mustard
Instructions
  1. Cut ¼ lb. bacon into slivers and brown lightly in skillet. Add the minced onion, celery, and peppers and cook lightly in the bacon grease. Add tomatoes, vinegar, sugar and spices and cook slowly for 10 minutes until sauce is quite thick. Add beans and mix well. Pour into casserole. Dot top of beans with long thin chunks of bacon square. Push chunks down until only top shows. Drool the molasses over the beans and bake in slow oven for about 3 hours. (Beans will be quite moist when hot.)
