EGG FOO YOUNG

EGG FOO YOUNG
 
Ingredients
  • 6 eggs
  • 1 can bean sprouts, well drained
  • 4 green onions, thinly sliced with tops (or ½ c. shredded onion)
  • ½ c. cooked chicken or cooked pork
  • 2 Tbsp. shortening
  • 1 Tbsp. cornstarch
  • 2 Tbsp. cold water
  • 1 c. chicken stock or chicken broth
  • 2 Tbsp. soy sauce
Instructions
  1. Beat eggs well and add onion, drained bean sprouts and meat. Heat the shortening in a heavy skillet. Drop mixture by large spoonfuls. Brown on one side and turn and brown on the other side. Remove to large platter and serve with sauce made this way:
  2. SAUCE: Soften the cornstarch in 2 tablespoons of cold water. Add it to cup of chicken broth. Add 2 tablespoons of soy sauce. Cook, stirring until sauce thickens.
