EGGPLANT AND CHEESE CASSEROLE

EGGPLANT AND CHEESE CASSEROLE
 
Ingredients
  • 1 med. sized eggplant
  • 2 Tbsp. grated onion
  • 1-1/2 c. grated cheese
  • salt and pepper
  • 2 Tbsp. butter
  • buttered crumbs
Instructions
  1. Peel, dice, and cook eggplant until tender. Add onions, butter, cheese and seasoning. Place in greased baking dish. Top with crumbs. Bake 20 minutes at 300 degrees.
