POP’S CHILI

POP'S CHILI
Serves: 6-8
 
Ingredients
  • 1 lb. hamburger
  • 2 Tbsp. chili powder
  • 1 tsp. salt
  • Pepper to taste
  • 1 Tbsp. brown sugar
  • 3 Tbsp. flour for thickening
  • ¼ c. minced onion
  • ¼ c. chopped celery
  • ¼ c. green (red) pepper, chopped
  • 1 (#2) can tomatoes (or lg. can tomato paste)
  • 1 c. water
  • 1 (1 lb.) can kidney or red beans
Instructions
  1. Mix together hamburger, flour, chili powder, salt and pepper. Brown hamburger well in skillet with Wesson oil, stirring often. Add minced onion, celery and green pepper. Add extra flour at this point as necessary to thicken to your desired thickness. Add brown sugar, 1 cup water and tomatoes. Let simmer for 1 hour, stirring often. When meat has cooked done, add the beans and let simmer for 15 minutes longer. Chili should be fairly thick. Serve with crackers.
