POP’S SWEDISH PANCAKES

POP'S SWEDISH PANCAKES
 
Ingredients
  • 3 eggs, beaten
  • 6 Tbsp. melted butter
  • 2 c. milk (warm to touch)
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • ¾ c. flour
Instructions
  1. Mix all ingredients to make a thin batter. A Teflon coated pan or griddle does not need to be greased if plenty of butter or oil has been added to the batter. Grease, if desired. Tip the pan as you pour in batter to make a large cake, that will be very thin. Heat should be at medium-high. Brown both sides and cover cake with jelly after removing from pan. Roll and sprinkle with powdered sugar. Makes 8-12 pancakes.

N.B. Are delicious with lingon berries and Cool Whip. Try it. L. J. Larson
