SALTED NUT CHEWS
 
Ingredients
CRUST:
  • 1-1/2 c. flour
  • ⅔ c. brown sugar
  • ½ tsp. baking powder
  • 1-1/2 tsp. salt
  • ¼ tsp. soda
  • ½ c. oleo
  • 1 tsp. vanilla
  • 3 c. miniature marshmallows
  • 2 egg yolks
TOPPING:
  • ⅔ c. corn syrup
  • ¼ c. oleo
  • 2 tsp. vanilla
  • 12 oz. pkg. peanut butter chips
  • 2 c. Rice Krispies
  • 2 c. salted Virginia peanuts
Instructions
  1. Heat oven to 350 degrees. Combine all crust ingredients except the marshmallows. Press into a 9x13 inch pan, ungreased. Bake 12-15 minutes or until light golden brown. Immediately sprinkle with the marshmallows and return to oven for 1-2 minutes until the marshmallows puff. Cool while preparing topping.
  2. Heat the first four topping ingredients until melted and smooth. Remove from heat and add cereal and nuts. Immediately spoon and press over marshmallows. Chill and cut.
