SAVORY FISH CHOWDER

SAVORY FISH CHOWDER
 
Ingredients
  • 1 lb. fish fillet
  • 3 c. milk
  • 1 c. light cream
  • 1 can French fried onions
  • ⅓ c. bacon slices
  • ¼ c. minced celery
  • 1 c. water
  • 1 c. diced raw potatoes
  • ½ c. diced carrots
  • 1 bay leaf, crumbled
  • ¼ c. butter
  • Salt & pepper to taste
Instructions
  1. Cut fish into bite-size pieces. Mix milk and cream and onions and set aside to soak. Cook bacon in large saucepan until lightly browned. Add celery and cook until softened. Add water, potatoes, carrots and bay leaf. Cover and cook for 10 minutes. Add fish, onion-milk mixture and butter. Bring to boil. Reduce heat. Cover and simmer for 5-8 minutes or until fish flakes easily when tested with a fork. Season with salt and pepper to taste. Serve WIth garnish of canned fried onions and a sprinkling of paprika.
