SPLIT PEA SOUP

SPLIT PEA SOUP
Serves: 4-5 servings
 
Ingredients
  • 4-1/,2 c. boiling water
  • 1-1/4 c. split peas
  • ½ c. diced celery
  • ¼ c. diced onion
  • Dash cayenne pepper
  • 1 bay leaf
  • 1-1/2 tsp. salt
  • ⅛ tsp pepper
  • Thyme
Instructions
  1. Combine all ingredients in a heavy saucepan. Cover. Bring to a boil and let boil moderately for about 10 minutes, no longer. Reduce heat and let mixture simmer gently for 45 minutes. Add a bit of crushed thyme if desired and cook 20 minutes longer. Puree, then reheat to serve.
