SWEDISH PEA SOUP

SWEDISH PEA SOUP
 
Ingredients
  • ½ lb. Swedish grey or yellow peas (soaked overnight and drained)
  • 1 lb. spare ribs
  • ¼ stick butter
  • 1 sm. onion, slivered
  • 1 sm. carrot, slivered
  • 1 chicken bouillon cube
  • 1 qt. water
  • Salt & pepper to taste
Instructions
  1. Have spare ribs cracked into 2 inch pieces and cook in water to which has been added the butter, onion, salt, pepper, bouillon cube. Let simmer until spare ribs are nearly done. Add the peas that have been soaked overnight and then drained. Add carrot and add enough water to make 1 quart liquid. Simmer slowly until peas are done.
