CARAMEL CORN (Jinny’s)

CARAMEL CORN (Jinny's)
 
Ingredients
  • 2 c. brown sugar
  • 2 sticks oleo or butter
  • ½ c. white Karo syrup
  • pinch of cream of tartar
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 7 qt. popcorn
Instructions
  1. Bring to a boil and boil for 5 minutes or to 248 degrees. Remove from heat and add 1 teaspoon baking soda. Pour over 7 quarts popped corn. Mix well in roaster pan. Put in oven (250 degrees) for 1 hour, stirring every 15 minutes or so. Spread out on wax paper when done.

    some of the ingredients are hidden in the directions on this one (the baking soda and the popcorn)

    Caroline received a recipe from her Secret Santa that was very similar except it added a 1/2 teaspoon of vanilla with the baking soda to the mix. It also added 3+ cups of pecans over the popcorn before pouring the syrup over the popcorn and roasting in the oven. Very delicious!
