DAD'S POTATO SAUSAGE (Korv)

Ingredients
  • 3 lbs. ground beef
  • 3 lbs. ground pork
  • 3 lbs. potatoes
  • ¼ c. condensed milk
  • 2 Tbsp. salt
  • 1 tsp. allspice
  • ½ tsp. pepper
  • ⅓ c. grated onion
  • ½ c. minced celery
  • 6 chicken bouillon cubes
Instructions
  1. Parboil peeled potatoes. Chill. Dissolve chicken bouillon cube in a little hot water and add to all other ingredients. Grind parboiled potatoes and add to mixture. Then stuff into casing, using grinder with an attached funnel. Do not fill casings too full.
  2. To cook, use 1 can chicken broth and 1 cup water. Cook amount needed in a deep saucepan. Put rest of sausages in deep freeze.

Oh the memories this recipe brings back! I can remember helping Grandma Larson letting me help stuff the sausage and then doing the same with my Mom for Christmas Eve. Thanks for the memories 🙂
